The first traces of cultivation of olive trees have been reported in Central Asia 4,000 years BC while today olives are grown throughout the Mediterranean, from where it spread to almost every continent.
By the variety, the predominant processed variety in our olive mill is indigenous Piculja which is followed by other varieties of South Dalmatia such as Oblica, Mezanica, Lastovka, Kosmača, Pujizica and other. Each one has its own unique flavors and aromas.
By careful determination of the ripeness of olive fruits we determine the harvest time while olive processing is performed exclusively by a cold process (less than 27C). In this way olive oil retains all the ingredients desirable for the human body as well as the richness of the taste of our island. Also, such processing prevents the development of undesirable chemical processes during storage.
